From history to the present, olive has been one of the most important elements of cultural and commercial interaction among Mediterranean civilizations. The importance of the ancient city of Klazomenai stems from the discovery of an olive oil workshop dating to the 6th century BC. Not to mention the olive, which creates culture in the Mediterranean world; Olive, one of the three products (wheat, olives, grapes), played a major role in the development of the city of Klazomenai. The city had a production potential with industrial organization in the 6th century BC. The olive oil workshop was the basis of trade, and the level of prosperity in the city increased with the increase in production.
According to the findings obtained from the excavations, the oldest olive workshop in Anatolian history was established in the city. In the first phase of the ancient city of Klazomenai, the olive workshop met the needs of the city itself and the needs of the nearby cities, and in the second phase, exports began to be made over time. During the excavations, decorated amphorae peculiar to the city of Klazomenai were found. As a result of a long work in Klazomenai, the olive oil workshop was restored in accordance with its original form. In this workshop; The olives in the mill are crushed by the rotation of the cylindrical stones at the end of the wooden shaft that extends down from the seven-meter-long ceiling. Meanwhile, olive oil is mixed with hot water to prevent it from freezing, and then olive oil is poured into the separation system through a special channel. In this application, which is based on the system of compound vessels, the olive oil, which is thoroughly purified by separating the precipitated water, is placed in the jugs peculiar to the city of Klazomenai after waiting for a while. This system has never been seen before, it is one of the Anatolian discoveries, it has made an important contribution to olive oil production.
